Gimme Two
1 oz (30mL) Passionfruit Chinola
1 oz (30mL) Blue Curacao
.5 oz (15mL) Moonshine
.75 oz (22.5mL) Vanilla Simple Syrup
.5 oz (15mL) Lemon Juice
Salt Foam
In a mixing glass, combine 1 oz Aquafaba, .25 oz Lemon Juice, and 1/8 tsp Sea Salt. Using a frother, whip until light and airy. In a shaker tin, combine 1 oz Passionfruit Liqueur, 1 oz Blue Curacao, .5 oz Moonshine, .75 oz Vanilla Simple Syrup, and .5 oz of Lemon Juice. Add ice, cover and shake until chilled. Double strain into a chilled coupe. Add Sea Salt Foam on top. Garnish with a lemon peel surfboard.

Vanilla Simple Syrup
Vanilla Simple Syrup adds a recognizable tropical floral sweetness that is buttery, light and brings out the sweetness of other flavors. It can easily be made by adding White Mexican Vanilla into simple syrup.
To Make Vanilla Simple Syrup:
4 oz (120mL) Water
.5 cup (200g) Organic Cane Sugar
.5 oz (15mL) White Mexican Vanilla
In a small saucepan, bring water to a boil. Add sugar and remove from heat, stir until sugar is dissolved. Once dissolved, stir in vanilla. Cool to room temperature and pour into a syrup bottle.

Lemon Juice
5-6% acidity
Less acidic than lime juice, lemon juice will add enough acidity to brighten flavors without overpowering when balanced with sweetness. Usually our preference when needing acid to emulsify with egg white, aquafaba or cream.

Salt Foam
An interesting way to add a contrasting texture and salty flavor to the top of a cocktail.
To make Salt Foam:
1 oz (30mL) Aquafaba
.25 oz (7.5mL) Lemon Juice
.125 Bar Spoon Salt
In a mixing glass, combine 1 oz Aquafaba, .25 oz Lemon Juice and 1/8 tsp Sea Salt. Blend with a whipper or frother until light and frothy.
